Ingredients:

           

●      230g Bad Hunter Peri Peri plant-based chicken Strips (available in the frozen section of Woolworths)

●      250g Mexican style rice (microwave pouch)

●      1 tablespoon olive oil

●      1 cup frozen peas

●      1 red capsicum, diced

●      Zest and juice of 1 lime, 1 lime sliced into quarters

●      Salt and pepper, to taste

Method:

 

  1. In a large frying pan, heat oil to medium-high heat and add Bad Hunter Peri Peri Strips. Cook until golden and then put aside until needed.

  2. Heat olive oil over medium heat. Add the diced capsicum and frozen peas. Cook for 5-7 minutes, or until the vegetables are tender.

  3. Microwave Mexican style rice pouch until rice is cooked and then add rice to capsicum and pea mixture. Stir well to combine.

  4. Zest the lime directly into the pan over the rice and vegetables. Cut the lime in half and squeeze the juice over the mixture. Stir to incorporate the lime flavour throughout the rice.

  5. Divide the rice between bowls and top with peri peri strips.

  6. Serve with lime slices.
