Ingredients:
● 250g Bad Hunter peri peri plant protein strips (available in the frozen section of Woolworths)
● 250g Mexican style rice (We used Ben's Original microwave rice found in the dry section of W)
● 1 tablespoon olive oil
● 1 cup frozen peas
● 1 red capsicum, diced
● Zest and juice of 1 lime, 1 lime sliced into quarters
● Salt and pepper, to taste
Method:
In a large frying pan, heat oil to medium-high heat and add 250g Bad Hunter lemon and herb plant protein strips. Cook until golden and then put aside until needed.
Heat olive oil over medium heat. Add the diced capsicum and frozen peas. Cook for 5-7 minutes, or until the vegetables are tender.
Microwave mexican style rice pouch until rice is cooked and then add rice to capsicum and pea mixture. Stir well to combine.
Zest the lime directly into the skillet over the rice and vegetables. Cut the lime in half and squeeze the juice over the mixture. Stir to incorporate the lime flavor throughout the rice.
Divide the rice between bowls and top with peri peri strips.
Serve with lime slices.
