Ingredients:

           

●      230g Bad Hunter Lemon & Herb plant-based chicken Strips (available in the frozen section of Woolworths)

●      1 cup pearl couscous

●      1 1/4 cups water

●      1 tablespoon olive oil

●      1 cup tomatoes, diced

●      1 cucumber, diced

●      1/2 cup raisins

●      1/2 cup walnuts, chopped

●      2 limes; zest and juice 1 lime and second one sliced into quarters

●      Salt and pepper, to taste

Method:

 

  1. In a medium saucepan, bring the water to a boil. Stir in the pearl couscous and reduce the heat to low. Cover and simmer for about 10-12 minutes, or until the couscous is tender and the water is absorbed. Remove from heat and fluff with a fork. Allow it to cool slightly and set aside until needed.

  2. While the couscous is cooking, prepare the other salad ingredients. Dice the tomato and cucumber and chop the walnuts.

  3. In a large mixing bowl, combine the cooked pearl couscous, tomatoes, diced cucumber, raisins, and chopped walnuts.

  4. Add the zest and juice of one lime to the bowl. Drizzle with olive oil and toss everything together until well combined.

  5. Season with salt and pepper to taste.

  6. In a large frying pan, heat oil to medium-high heat and add Bad Hunter Lemon & Herb Strips. Cook until golden and then put aside until needed.

  7. Divide the couscous salad between plates, add the prepared lemon and herb strips to the dishes and serve while strips are hot.
